My favourite cupcake recipe


My favourite baking recipe for a normal basic cupcake or cake is easy!!
Achieving a soft spongey feel is what I am looking for. and I realized using oil instead of butter in the recipe makes a lot of difference!! A recipe that calls for butter will hardens a cake when you put in a fridge but a recipe that calls for oil will not! I will add a little of butter if required.

My favourite recipe is this:

240g of cake flour
150g of sugar
1 tsp of Baking Powder
1/2 tsp of baking soda
1/4 tsp of salt
1/4 cup of vegetable oil, 80ml
1 cup of Buttermilk, 240ml  (Add few drops of lemon juice into the milk and sit for 5 mins)
2tsp of vanilla extract
2 egg
2 tsp of butter (optional)

-Sift all the dry ingredients.
- Whisking butter, egg and oil till fluffy, add vanilla extract.
- In low speed, add one third of the dry ingredients in first, then half of the buttermik. Mix for a while and repeat with dry ingredient then buttermilk.  (Alternate the dry & milk.)
- Start & end with the dry ingredient till all are mixed. DO NOT OVERMIX.
- Batter will be liquid.

I add butter is for enhancing the taste. But omitting is fine as well!
Instead of vegetable oil, I used Olive oil for a healthier option!
I baked this recipe twice, once in cupcake form, the other one in a cake form.
Both came out equally yummy!

I added few drops of red coloring and it came out pink! My favourite color ^^

The other cake that I baked was in Matcha flavor. Didnt take a photo of it, but it's light & yummy too!
I merely add 1 tsp of Matcha powder into the batter. :-)
